These are a perfect treat to serve on St. Patrick's Day. Made with Guiness Irish Stout, they're rich and fudgy. Pour some delicious Guiness chocolate ganache over the top, and you have an amazing pan of brownies!
Preheat oven to 350 degrees. Thoroughly grease an 8x8 baking pan.
In a large mixing bowl, whisk together the oil, beer and sugar. Add the vanilla and eggs until well combined. Whisk in the butter and coffee.
In a separate bowl, add the flour and cocoa powder and mix until well combined. Slowly add the dry mixture to the wet, and stir until there are no lumps.
Pour into the greased baking dish, and bake for 35-40 minutes. Every oven is different, so check it at the 35 min mark. Insert a toothpick in the middle, if it comes out mostly clean, they're done. Let them cool for 30 minutes.
Create a double boiler on the stove using a pot and heat-proof mixing bowl. Add the butter and the chocolate to the bowl, and let it melt completely. Then add in the icing sugar, whipping cream, stout and vanilla extract. Stir until smooth.
Carefully remove the bowl off of the pot, and pour the ganache over the brownies.
Store brownies in an airtight container in the fridge for up to 1 week.
