Strawberry and Coconut Creme Overnight Oats

One of my favourite overnight oat recipes, the shredded coconut and oats bind with the milk to create a smooth, creamy texture. Add some fresh strawberries and some pecan pieces for a crunch and you've got the perfect healthy breakfast!

Servings 1 bowl

Ingredients

  • 1/3 cup rolled oats GF if needed
  • 1/2 cup + 1 tbsp milk
  • 1 tbsp ground flax
  • 1/4 tsp vanilla extract
  • 1/2 tbsp maple syrup
  • 1 tbsp shredded unsweetened coconut
  • 3-4 strawberries diced small
  • 1 tbsp chopped pecans

Instructions

  1. In a mason jar or small container, add the oats, milk, ground flax, vanilla, maple syrup, and shredded coconut. Place a lid on the jar/container and shake well. Place in the fridge for a minimum of two hours, or overnight.

  2. Before you're ready to eat, mix in the strawberries and chopped pecans. Give it a good stir and enjoy!
