Smoked Salmon Avocado Breakfast Sandwich

Some smoked salmon, a little avo, homemade pesto mayo. Yum.

Ingredients

  • 1 oz smoked salmon sliced
  • 1/2 avocado sliced
  • 1 tbsp pesto mayo
  • 1 egg fried
  • 1 tbsp greens (spinach, lettuce, sprouts) your choice
  • red onion sliced thin

Instructions

  1. Thinly slice the smoked salmon, avocado and red onion.

  2. In a small bowl, mix 2 tbsp mayonnaise with 1 tsp pesto. Stir and set aside.

  3. Pop the bread in the toaster. While the bread is toasting, fry your egg.

  4. Spread 1 tbsp of pesto mayo on each slice of bread. First, layer smoked salmon, then the avocado. Put a few pieces of red onion on top, and then cover with the fried egg. Stick the greens to your second slice of toast and form the sandwich.

  5. Slice in half and enjoy!
