Crunchy Chocolate Peanut Butter Bars (GF, V)

Sweet, Salty, Crunchy, these bars have it all. They're no bake, easy to make, and a healthier choice when you're craving a sweet treat.

  • 1 cup natural crunchy peanut butter
  • 1/4 cup coconut flour
  • 1/3 cup maple syrup
  • 1/2 cup chopped peanuts
  • 1 80g bar 70% dark chocolate
  • 2 tsp coconut oil
  • 1 1/2 tsp coarsely ground sea salt


  1. In a microwave safe bowl, add the peanut butter, and pop in the microwave for 30-40 seconds to soften up the PB. Add the maple syrup and stir.

  2. Once slightly cooled, add the coconut flour, chopped peanuts and 1/2 tsp of the sea salt. Mix until well combined.

  3. Place a piece of parchment paper in an 8x8 baking dish. Spread the peanut butter mixture evenly in the dish. Place in the freezer for 1 hour.

  4. In a small bowl, add the chocolate and coconut oil and melt in the microwave for 30 second intervals, removing to stir. Careful not to burn the chocolate. Once it's fully melted, remove the PB mixture from the freezer, and pour over top, spreading evenly. Sprinkle the remaining sea salt over top, and place in the fridge for 2 hours.

Recipe Notes

These bars will keep in the fridge for up to 2 weeks. They also freeze well.
