Peanut Butter Banana Stuffed Sweet Potatoes

A nutritious breakfast that’ll keep you full all morning. These stuffed sweet potatoes are easy to make, full of fiber, potassium, vitamin A, and protein. Tastes like dessert for breakfast! Naturally vegan and gluten-free.

Ingredients

  • 1 small sweet potato washed and scrubbed
  • 1 small banana sliced
  • 1 tbsp natural creamy peanut butter
  • 2 tbsp hemp hearts
  • 1 tbsp cacao nibs or chocolate chips
  • 1 tbsp maple syrup optional

Instructions

  1. Thoroughly wash and scrub the sweet potato, and poke holes in it with a fork.

  2. Place in the microwave on high for 3 minutes. When it’s done, flip it over, and cook on high for another 3 minutes.

  3. Carefully remove the sweet potato from the microwave, and place it on a plate. Let it rest for a couple of minutes. 

  4. Slice the banana. Cut a line down the middle of the sweet potato, and fill it with the hemp seeds, banana, and cacao nibs. Top with a dollop of peanut butter and a drizzle of maple syrup.

Recipe Notes

This recipe is easy to double up and is perfect for meal prep! They are great leftover so if you want to make them for a few days for breakfast, they will hold up great.
