M&M's Christmas Cookies
These are a cute and festive Christmas cookie for those big and small. A perfect snack to leave Santa!
Ingredients
- 1 cup unsalted butter room temp
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 tsp vanilla
- 2 eggs
- 2 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 2 cups Milk Chocolate Christmas M&Ms
Instructions
-
Preheat oven to 350 degrees.
-
In a large mixing bowl, beat butter and sugars until smooth. Then add the eggs and vanilla. Mix again until batter is smooth.
-
In a medium mixing bowl, add the flour, baking powder, baking soda and the salt. Mix together.
-
Slowly add the dry mixture to the wet, mixing on low speed. Once everything is combined, turn up the speed of the mixer, and beat until smooth. Scrape the sides of the bowl, then add the M&M's (reserve about a handful for the top of the cookies).
Mix again on low speed until the M&M's are just mixed in the batter. (Don't overmix or they will break)
-
Shape the cookie dough into golf ball sized dough balls. Place on an un-greased cookie sheet, leaving a couple of inches between each cookie.
-
Bake for 9 minutes***, and remove from oven. Let cool on the pan for 10 minutes, then transfer to a cooling rack. Store in an airtight container for 1-2 weeks.
Recipe Notes
***It is very important not to exceed the cooking time!!!*** If you want a soft, chewy cookie, do not bake for more than 9-10 mins. Once the edges start to lightly brown, remove them from the oven.
The cookies will look soft in the middle, and start to brown on the edges when they are done. If you like a crunchier cookie, the longest I would recommend baking them for is 11 minutes. When you pull them out of the oven they will still cook on the hot tray.
