Mango Coconut Overnight Oats
Overnight oats that taste like dessert for breakfast. Super creamy, with a touch of sweetness, it’s like a taste of breakfast from the Caribbean. A healthy breakfast option, easy to make, and packed with fiber, whole grains, and protein.
- 1/2 cup GF rolled oats
- 1/2 cup milk I use hemp
- 1/4 cup water or more milk
- 1 tbsp unsweetened shredded coconut
- 1 tbsp chia seeds
- 1-2 tbsp maple syrup
- 2 tbsp plain Greek yogurt
- 1/2 medium mango peeled and diced
Place all ingredients except the mango in a medium-sized Tupperware container (or mason jar) and mix together. Refrigerate for at least two hours, or overnight.
Before serving, give the oats a good stir, and add the diced mango.
This recipe is easy to double, and perfect if you want to prep breakfast for a few days. The oats will keep in the fridge for 3-4 days.
