Mango Coconut Overnight Oats

Ingredients

  • 1/2 cup GF rolled oats
  • 1/2 cup milk I use hemp
  • 1/4 cup water or more milk
  • 1 tbsp unsweetened shredded coconut
  • 1 tbsp chia seeds
  • 1-2 tbsp maple syrup
  • 2 tbsp plain Greek yogurt
  • 1/2 medium mango peeled and diced

Instructions

  1. Place all ingredients except the mango in a medium-sized Tupperware container (or mason jar) and mix together. Refrigerate for at least two hours, or overnight.

  2. Before serving, give the oats a good stir, and add the diced mango.

Recipe Notes

This recipe is easy to double, and perfect if you want to prep breakfast for a few days. The oats will keep in the fridge for 3-4 days.
