

Healthy Whole Grain Walnut Banana Bread
Ingredients
- 3/4 cup whole grain flour or sub whole wheat flour
- 3/4 cup all-purpose flour
- 1 tsp baking soda
- 1/2 cup butter melted
- 1/4 cup brown sugar
- 2 eggs
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/2 cup plain Greek yogurt
- 3 medium bananas mashed
- 1/2 cup walnuts chopped

Preheat oven to 350 degrees

In a small mixing bowl, combine the flour and baking soda. Set aside.

In a large mixing bowl, add the melted butter and sugar and whisk together until smooth. Add the eggs, vanilla and cinnamon, and mix together until well combined.

Mix in the flour and baking soda mixture with the wet ingredients, and fold together. It will be very sticky, and a little bit dry. Add the yogurt, bananas and walnuts, and mix until a nice smooth batter has formed.

Place the batter in a greased loaf pan. Bake for 55-60 mins. Check to see if it's done by inserting a toothpick in the middle of the loaf. If it comes out clean, it's done.
Recipe Notes
If you don't have any whole grain or whole wheat flour, just use all-purpose!
