

Grain-Free Chocolate Chunk Banana Bread
A deliciously dense banana bread filled with sweet ripened banana, chunks of dairy-free chocolate, and full of flavour. Made with cassava flour, this loaf has a nutty taste. Gluten-free and grain-free.
Ingredients
- 1 cup cassava flour
- 1/3 cup coconut flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 2 tsp ground cinnamon
- 2 large eggs
- 1/3 cup maple syrup
- 1/4 cup coconut oil melted and slightly cooled
- 1 tsp vanilla extract
- 3 medium ripe bananas mashed
- 1/2 cup chocolate chunks optional
Instructions

Preheat oven to 350 degrees and grease a loaf pan.

Add all of the dry ingredients to a bowl, and mix until well combined.

In a large mixing bowl, whisk together the eggs, maple syrup and vanilla extract. Add the coconut oil, and mashed bananas. Slowly add the dry ingredients into the wet, and stir until well combined. The batter is meant to be on the thicker side. Stir in the chocolate chunks.

Pour the batter into the greased loaf pan, and make sure it’s spread out evenly. Bake for 55-60 minutes. You can test doneness by inserting a toothpick in the middle. If it comes out clean, it’s done.

Let the banana bread cool in the loaf pan for 15-20 minutes then remove and transfer to a cooling rack.
