

Garlic Scape Pesto
This pesto is for the garlic lover. Garlic scapes are the tops of the garlic bulb, and are stronger than an actual garlic clove. Great spread on crackers, crusted on salmon, or even as an aioli on your favourite sandwich!
Servings 1 cup
Ingredients
- 2 bunches garlic scapes about 16-20 scapes
- 1 cup grated fresh parmesan
- 1/2 cup olive oil
- 4 tbsp lemon juice
- 1/4 tsp salt
- 1/4 tsp pepper
Instructions

Please all ingredients in the bowl of a food processor. Pulse until everything is well combined and pesto has turned into a paste.
Recipe Notes
Keeps in the fridge for up to 1 week.
This pesto is thicker than your average pesto because of the scapes. If you want it thinner, add more olive oil and lemon juice. I prefer mine thicker because I love to eat it as a snack on crackers.
