

Garlic Parmesan Brown Rice
This creamy brown rice resembles a risotto without all the work! It is so flavourful, and a perfect side dish for chicken.

Ingredients
- 1 1/2 cups short-grain brown rice* I love Lundenberg’s organic
- 2 3/4 cup chicken broth
- 2 cloves garlic
- 1 1/2 cups parmesan cheese grated
Instructions

Put the brown rice, chicken broth, and garlic cloves in a medium pot. Bring to a boil.

Cover with a tight-fitting lid, and reduce the heat to low. Cook for 45 minutes.

Remove the rice from the heat, and stir the garlic into the rice. Add the parmesan cheese, and mix until creamy and well-combined.
Recipe Notes
If you can’t find short-grain brown rice, long grain works as well.
I always try to buy organic brown rice, as rice can be full of pesticides and has been linked to carcinogens.
