Easy Broccoli Pesto
This pesto recipe is made with all fresh ingredients, and is extremely flavourful. A perfect balance of citrus, garlic, and herbs make for a delicious pesto.
- 1 cup broccoli steamed until soft
- 2 cups spinach loosely packed
- 1/2 cup basil loosely packed
- 2 tbsp lemon juice
- 1/2 cup parmesan cheese
- 1/2 cup asiago or double parmesan
- 1 clove garlic minced
- 1/2 tsp salt and pepper
- 1/2 cup olive oil
In a food processor, add all the ingredients except the olive oil. Pulse on low until everything is smooth. You may have to scrape down the sides a couple of times in the process.
Place the food processor on the low setting, and slowly add in the olive oil. This pesto is on the thicker side, but you can add more olive oil until it has reached the desired consistency.
