Creamy Dijon Garlic Chicken
Everyone will fall in love with this chicken recipe. Impress guests with this dish, or simply make it for date night. Easy to make, and requires only a few ingredients.
- 4 chicken breasts boneless/skinless
- salt and pepper
- 3 tbsp avocado oil divided
- 2 cloves garlic minced
- 3/4 cup chicken broth
- 1 tbsp Dijon mustard
- 1 tsp fresh thyme chopped
- 1/4 cup cream 10%
Pound the chicken breasts so they are about 1/2 inch thick. Season both sides with salt and pepper.
Place a large frying pan or cast-iron skillet on medium heat. Add 2 tbsp of oil, and once the pan is hot, add the chicken. Brown both sides of the chicken breasts, and cook until juices run clear and it is no longer pink in the middle. About 10-12 minutes.
Remove the chicken from the skillet and let it rest on a plate.
Using the same skillet, turn down to low heat, and add 1 tbsp of oil. Add the garlic and cook for 30 seconds, careful not to brown it. Add the chicken broth and scrape the pan of all the leftover brown chicken bits (extra flavour!).
Once the chicken broth starts to bubble, add the Dijon mustard. Let the sauce come to a low bubble then whisk in the thyme and cream, and cook for 2-3 minutes.
Re-add the chicken, and cook for an additional 5 minutes, just to heat it up. Serve on a bed of rice or mashed potatoes.
If you love sauce, I recommend doubling, as this recipe makes enough just to serve on top of the chicken.
