

Cheesy Bacon Potato Bites
Crispy on the outside, soft on the inside, these little bites are an explosion of flavour. A great party appetizer for those big and small.
Ingredients
- 2 cups shredded white potatoes **see note
- 2 cups old cheddar cheese shredded
- 2 green onions sliced thin
- 1 egg
- 3 slices cooked bacon crumbled
- 1 tsp garlic powder
Instructions

Preheat the oven to 400 degrees.

Shred the potatoes and place them in a tea towel or cheesecloth. Wring out the excess water (it doesn’t have to be extremely dry).

In a large mixing bowl, add the shredded potatoes, cheese, green onions, egg and garlic powder. Mix until everything is well combined, then add the bacon and mix one last time.

Grease a mini-muffin tin, and fill each cup right to the top with the potato mixture. You can press it down a little bit.

Bake in the oven for 20-25 minutes until the edges are a golden brown and the tops are very lightly browned.

Remove and let them rest for 5 minutes. Remove the muffins and serve with a side of sour cream.
Recipe Notes
**If you have a food processor, shredding the potatoes will be much quicker.
