Carrot Cake Overnight Oats

A healthy version of carrot cake in the form of oatmeal. Enjoy these overnight oats for breakfast all week. It’s creamy, full of nutrients, and will keep the belly full all morning.

  • 1 cup rolled oats gf if needed
  • 1 1/2 cups milk your choice
  • 1/2 cup shredded carrots
  • 2 tbsp shredded coconut
  • 1/4 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 tsp ground nutmeg* see note
  • 1/4 tsp ground ginger*
  • 1 tbsp chia seeds
  • 2 tbsp maple syrup
  • 2 tbsp raisins optional


  1. In a large bowl, add the oats and milk. Stir together. Add the rest of the ingredients. Stir together. Divide the oats between two containers.

  2. Store in the fridge or overnight. Give the oats a good stir before eating.

Recipe Notes

Allspice can be substituted instead of ginger and nutmeg. Just add 1/4 tsp.

To make the oats extra creamy, add 1/2 tbsp yogurt.
