Carrot Cake Energy Bites
These no-bake energy bites can be whipped up in under 10 minutes. All made with healthy, whole ingredients. A bite-sized carrot cake!
- 3/4 cup pitted dates loosely packed
- 1/2 cup pecans
- 1 1/2 cups shredded carrots
- 1 cup unsweetened shredded coconut divided
- 2 tbsp coconut oil
- 1 tsp cinnamon
- 1/4 tsp nutmeg
Soak the dates for 30 minutes in hot water.
Add the dates and pecans into a food processor, and pulse until it becomes a dough. Add in the shredded carrots, 3/4 cup of the coconut, and the coconut oil. Pulse the mixture again until the ingredients are just incorporated.
Roll the mixture into balls, and then roll them through remaining shredded coconut.
Place in the fridge for 2 hours. Store in an airtight container in the fridge for 2 weeks.
If you prefer a little more sweetness, feel free to add 1 tbsp maple syrup or honey. I find the dates give this recipe the perfect amount of natural sweetness.
