Caprese Spinach Salad with Baked Salmon
This is one of my go-to salads on a busy weeknight. I always have all the ingredients on hand, and it’s quick to prepare. If you are vegetarian, you can omit the salmon and add more cheese and avocado for extra protein.
- 1 6 oz piece of salmon
- 2-3 cups spinach
- 1/2 avocado sliced
- 1 small tomato sliced
- thinly sliced red onion optional
- 6 balls Boccacini cheese (or feta cheese)
- 3 tbsp garlic balsamic dressing
Preheat oven to 400 degrees. Place the salmon on a lined baking sheet. Sprinkle with salt and pepper. Bake 10-12 minutes.
Place the spinach on a large plate, and add sliced tomatoes, avocado, and cheese.
Once the salmon is done baking, pull out of the oven and place on top of the salad. Drizzle 3 tbsp. of garlic balsamic dressing
Garlic Balsamic Dressing
This quick dressing is a staple in my fridge. I eat it every week and have yet to get sick of it! It is so versatile, especially in the summer.
- 4 tbsp olive oil
- 2 tbsp balsamic vinegar
- 1 tsp Dijon mustard
- 1 clove garlic minced
- salt and pepper
Add all the ingredients into an air tight container and give it a good shake until well combined.
Keeps in the fridge for a week.
