Mini Banana Chocolate Chip Muffins

The bite-sized chocolate chip muffins are a great grab and go snack for little hands (and big too!) With very little sugar, these are a snack you can feel good about sharing with little ones.

Ingredients

  • 1 1/2 cups gluten-free oat flour* see note
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 1/2 tsp ground cinnamon
  • 3 small ripe bananas mashed
  • 1/4 cup maple syrup
  • 1 tsp vanilla
  • 1 egg
  • 2.5 tbsp apple sauce
  • 1/3 cup Greek yogurt
  • 3/4 cup semi-sweet chocolate chips

Recipe Notes

*to make your own oat flour, grind up rolled oats or quick oats in a food processor until smooth and powdery.

If you do not have a gluten allergy, substitute oat flour with regular all-purpose flour.
