It’s that time of the year again, when fresh local berries are in full swing!

It was a slow start to the berry season this year, as it was a wet, rainy spring. About a month ago I was chatting with some berry growers at my local farmers market, and they said this will be the best strawberry season they’ve seen in years!

You can’t beat a bowl of freshly picked juicy sweet berries. I’m a berry fiend in the summer. Once I get them home and washed, usually the fruit only lasts a day or two.

It’s always easy to throw berries into some yoghurt or oatmeal in the morning, so I wanted to shake things up and make a new, healthy, and super tasty breakfast recipe for you.

Berry Delicious Stuffed Sweet Potatoes – Food is Life

What you’ll need:

  • Sweet Potatoes
  • Yoghurt (your choice) I go dairy-free these days and eat coconut yoghurt, but Greek yoghurt would work great also
  • Strawberries
  • Blueberries
  • Blackberries
  • Granola (I use gluten-free granola)

Optional Toppings:

  • chia seeds
  • hemp seeds
  • ground flax
  • maple syrup

Don’t be intimidated by cooking the sweet potato! It’s so easy, and they’ll be ready in no time. I don’t use my microwave often, but for this recipe, it comes in handy.

All you’ll need to do is poke the sweet potatoes a few times with a fork, and pop them in the microwave, cooking in 3-minute intervals. (I cook it on the baked potato setting). They’ll cook in about 6-8 minutes, depending on the heat of your microwave.

Carefully remove the sweet potatoes from the microwave and let them cool. Slice the sweet potato down the middle, mash the inside a little bit, and load it up with all of the other ingredients.

And that’s it! Easy peasy. A yummy breakfast that can be prepared ahead of time for those busy mornings, to enjoy with a cup of coffee.

Berry Delicious Stuffed Sweet Potatoes

Shake up your morning routine with these tasty yoghurt and berry stuffed sweet potatoes. Customize them with your favourite yoghurt, a handful of fresh berries, and a sprinkle of granola.

Ingredients

  • 2 small organic sweet potatoes scrubbed
  • 1 cup organic yogurt Greek or Coconut
  • 1/4 cup fresh strawberries
  • 1/4 cup fresh blueberries
  • 1/4 cup fresh blackberries
  • 1/2 cup organic granola I use Kashi GF granola

Optional Toppings

  • maple syrup
  • ground flax
  • chia seeds
  • hemp seeds

Instructions

  1. Poke the sweet potatoes with a fork, and place them in the microwave. Cook on high for two 3-minute intervals. Slide a knife through the middle to check doneness (it should go through easily).

  2. Let the sweet potatoes cook completely. Cut them open and lightly mash the potato. Add the yoghurt and top with fresh berries and granola. 

Recipe Notes

This is a perfect breakfast for meal prep! You can make them ahead for a few days. Place the sweet potatoes in an airtight container for 2-3 days.
