Are you a list maker? I am. I make lists for everything. I’d like to think they help keep me organized, but these days I’m pretty confident they’re more for reminders (my memory just isn’t as spiffy these days).
I have lists everywhere. If you come to my house and take a look around, I can guarantee you’ll find at least a handful of them hanging around. On my counter, on my dining room table, my junk drawer, a million in my purse…
A couple of months ago I was at my cousin’s house for a visit. A few days later she sent me a text with a picture OF A LIST! And asked if it was mine… Why yes, yes it is.
Anyway, can we talk about these bite-size rounds of
These bacon guacamole sweet potato bites are a household favourite. Whenever Mr. FIL and I have a wine and appetizer night, you can guarantee these are on the menu.
What I also love about them is they’re made with all-natural ingredients, and whole foods.
If you’re like me, I tend to over-indulge when it comes to appetizers. So when that happens with these bites, (which it always does!) I know that I’m eating a good nutritious snack.
So, what do you need for this recipe?
- Nitrate-free bacon
- Sweet Potatoes
- Fresh lime juice
- Salt and pepper
- Avocado oil
- Green onions

Bacon Guacamole Sweet Potato Bites
The perfect bite-sized appetizer! This healthy snack is perfect as a party appetizer, or a party for two. It comes together quickly and easily. You won’t feel guilty about seconds or thirds…
Sweet Potato Rounds
- 1 medium sweet potato scrubbed
- 2 tbsp avocado oil
- 1/2 tsp salt and pepper
- 1 large ripe avocado
- 1 green onion diced
- 1 tbsp cilantro chopped
- 1 tsp lime juice about 1/2 lime
- 1/4 tsp salt
- 2 tbsp chopped tomato
Sweet Potato Rounds
Preheat the oven to 400 degrees.
Slice the sweet potato into rounds, about 1/2 inch thickness. Toss in a bowl with avocado oil, salt, and pepper. Place them on a baking sheet, and cook in the oven for 25 minutes until golden brown. (Flip them after 15 minutes). Let them cook on the baking sheet.
Slice the avocado in half, and carefully remove the pit. Gently cut cubes into your avocado, and squeeze them out of the skin into a bowl. Add the green onion, cilantro, lime juice, and salt. Gently mix the ingredients together until well combined. Add in the tomato and gently mix it in.
Place the sweet potato rounds on a plate, and spoon the guacamole on top of each round. Top with bacon bits and serve.
