The Best GF Banana Bread

After years of experimentation with gluten-free flours, I present to you the most perfect gluten-free banana bread. A slight crunch on the outside, and soft on the inside. The most perfect texture and you would never know it’s gluten-free!

Ingredients

  • 2 eggs
  • 1/2 cup ghee, melted and cooled or sub butter
  • 1/2 cup organic cane sugar sub brown sugar
  • 1/4 cup dairy-free milk your choice
  • 1 1/2 cups GF flour** see note
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 2 medium ripe bananas
  • 1/2 cup walnuts optional

Instructions

  1. Preheat oven to 350 degrees.

  2. In a large mixing bowl, whisk together the eggs, butter, sugar, and milk. 

  3. In a separate bowl, measure out the GF flour, baking powder, baking soda, salt, and cinnamon. Stir together.

  4. Add the dry ingredients into the wet, and fold/stir until there are no clumps.

  5. Mash the bananas until smooth, and add into the batter along with the walnuts. Stir until well combined. Place the batter in a greased baking pan, and bake for 45-50 minutes.

  6. Let it rest in the pan for 10 minutes before removing to a cooling rack.
