Tasty Black Bean, Avocado Feta Dip (Vegetarian, Gluten Free)

This recipe is so versatile, and super good for you. Pair it as a snack with some corn chips or eat it as a salad for lunch!

  • 1 can black beans
  • 1 avocado pitted and diced
  • 1/2 small tomato diced
  • 1/2 small red onion diced
  • 1-2 jalapenos seeded and chopped
  • 1/4 cup cilantro diced
  • 1/3 cup crumbled feta cheese
  • 1/2 cup corn kernels
  • 1/2 tsp salt
  • juice of one small lime


  1. Drain the black beans from the can into a colander, and rinse under cold water. Shake the colander a few times, and let them sit for a few minutes for the water to drain.

  2. In a medium bowl, add the avocado, tomato, red onion, jalapenos, cilantro, crumbled feta, and corn. Add in the beans, salt and lime juice. Stir until all the ingredients are well combined. Adjust salt and lime juice accordingly.

  3. Refrigerate for at least one hour before serving. Store in an airtight container for 1-2 days.

Recipe Notes

The longer this recipe sits, the better it tastes. I always make it in the morning for later in the day.

I sometimes eat it without the corn chips and serve it as a salad. Delicious both ways!

This recipe is so versatile. You can add/omit whatever ingredients you'd like. I've made it so many different ways. It also tastes great with red pepper instead of jalapenos.
