Sweet & Savoury Twice Baked Sweet Potatoes
These twice baked potatoes have a great balance of flavours. The saltiness from the bacon, and sweetness from the sweet potatoes. It's sure to wake up some taste buds!
- 4 small sweet potatoes scrubbed and dried
- 4 pieces bacon crumbled
- 1/2 cup chopped spinach
- 2 green onions diced
- 3 tbsp coconut milk or any other milk of choice
- 1/2 tsp garlic powder
- pinch of salt and pepper
Preheat oven to 400 degrees.
Poke the sweet potatoes with a fork, and place on a baking tray. Bake them for 50-60 minutes until soft.
In a medium bowl, add all the other ingredients. Reserve 1/2 of the bacon crumbles.
When the potatoes are cool enough to handle, slice them in half and scoop out the filling. Place the filling in the bowl with the other ingredients, and mix together until well combined.
Store in the fridge until 10 minutes before serving.
Place the potatoes on a baking sheet, and put them in the oven at 350 degrees for 10-15 minutes to reheat.
