Peanut Butter Banana Bread Oatmeal

  • 2 med bananas very ripe
  • 2 eggs
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1/3 cup natural peanut butter regular will work fine too
  • 3 tbsp maple syrup
  • 1 1/2 cups rolled oats
  • 1/4 cup oat flour
  • 1 tsp baking powder


  1. Preheat oven to 350 degrees. Grease an 8x8 baking pan. 

    I use coconut oil, but any mild oil or butter will work.

  2. In a large mixing bowl, mash the banana until it is mushy. Add the eggs, milk, vanilla extract, peanut butter and maple syrup. Whisk together until everything is smooth. 

  3. Add the rolled oats, oat flour and baking powder to the wet mixture, and stir until just combined. 

  4. Pour in the 8x8 baking pan, and bake for 20-25 minutes. When it's done, the outside will be lightly browned, and the middle is firm.

Recipe Notes

You can get creative with this dish! Add some chocolate chips for an extra treat and some sweetness, or walnuts for some crunch.
