Curried Chicken Salad Sandwich
Curry chicken, fresh apple, and pecans give this chicken salad a delicious crunch. The mayo has been reduced, and the addition of Greek yogurt lightens it up without sacrificing taste. A delicious healthy sandwich.

Servings 1 sandwich
- 2 slices fresh bread of your choice (I used marble rye)
- 1/2 chicken breast shredded
- 1 tbsp mayonnaise
- 1 tbsp Greek yogurt
- 3/4 tsp yellow curry powder
- 1/8 tsp garlic powder
- 1 pinch pepper
- 1 green onion sliced thin
- 1/4 apple finely diced
- 1 tsp chopped pecans optional
Shred the chicken and place it in a bowl. Add the diced apple, green onion, pecans, mayonnaise, Greek yogurt, pepper, and the curry and garlic powder.
Mix well and spread on your sliced bread. Add some greens of your choice, and serve with a delicious deli pickle!
If you don't have any Greek Yogurt on hand, just substitute an additional tablespoon of mayo.
