Creamy Cauliflower Potatoes

This dish is super easy to make and requires only 4 ingredients. It’s smooth, creamy, and so tasty. A great side dish for any holiday, or a Sunday night dinner.

Ingredients

  • 4 medium white potatoes
  • 4 cups cauliflower florets
  • 150 grams goat cheese
  • 1/2 tsp garlic powder
  • 1 tsp fresh thyme optional

Instructions

  1. Start by cooking the potatoes and cauliflower. Peel and cube the potatoes, and place in a pot on the stove. Bring to a boil and cook until soft, about 15 minutes. In another pot, steam or boil the cauliflower until softened, about 10 minutes.

  2. Drain the potatoes and the cauliflower. Add the cauliflower to the potato pot, and mash them together. Crumble the goat cheese in, and add the garlic powder. Mash until smooth.

  3. Place the mixture in a baking dish. Place under the broiler, and lightly brown the top of the potatoes. Pay careful attention to the top, ensuring doesn’t burn. Sprinkle with thyme, and serve. 

Recipe Notes

This dish is great to make ahead of time. Keep it in the fridge, and reheat in the oven for 15-20 minutes before serving.
