Coconut Curry Chicken Skewers with Spicy Peanut Sauce

Tender, juicy chicken marinated in a coconut curry sauce, and served with a spicy peanut sriracha sauce for dipping. This dish will awaken your taste buds!

  • 3 chicken breasts boneless/skinless
  • 1 cup coconut milk
  • 1 tbsp yellow curry powder
  • 1 tsp ginger grated
  • 2 cloves garlic minced

For the peanut sauce

  • 1/4 cup natural peanut butter
  • 1 tsp honey
  • 1 tsp sriracha sauce
  • 1 tsp ginger grated
  • 1 tsp lime juice
  • 2 tbsp soy sauce
  • 1/2 tsp sesame oil
  • 1 tsp rice wine vinegar optional
  • 2-3 tbsp warm water


  1. Cut the chicken up into long slices, about 1 inch thick. 

  2. In a bowl, whisk together the coconut milk, curry powder, ginger and garlic. Add the chicken, cover and refrigerate for at least an hour, up to 24 hours.

  3. Heat a grill to medium high. Place the chicken on bamboo skewers, and pop them on the grill to cook. About 10-12 minutes. Turn once halfway through cooking.

  4. Serve with the peanut sauce for dipping!

For the peanut sauce:

  1. In a small bowl or measuring cup, add all the ingredients for the sauce and mix together well. If the sauce is too thick, add 1 tbsp of warm water, and slowly add warm water until you reach the desired thickness.
