Cinnamon Raisin French Toast Casserole

Sunday morning brunch is served! Wake up to this delicious gluten-free french toast casserole. Make it the day before so you can wake up and pop it in the oven for filling, healthy scrumptious breakfast.

  • 1 loaf gluten-free cinnamon raisin bread** Cubed
  • 10 eggs
  • 1 cup hemp milk any milk will work
  • 2 tsp pure vanilla extract
  • 2 tsp ground cinnamon
  • pure maple syrup for serving

Strawberry Sauce (optional)

  • 1 cup frozen strawberries
  • 1 tbsp maple syrup


  1. Add the eggs, milk, vanilla, and cinnamon to a mixing bowl, and whisk until everything is well combined.

  2. Grease a medium sized casserole dish (I used an 8×10) and add the cubed bread. Pour the egg mixture over the top and lightly push the top pieces to ensure everything is wet and coated.

  3. Cover and refrigerate overnight.

  4. Preheat oven to 350 degrees. Place the casserole in the oven and bake for 45 minutes. The tops will be lightly browned and crispy.

  5. Drizzle with maple syrup and serve.

Strawberry Syrup

  1. In a small saucepan, add the strawberries and maple syrup and bring to a low boil. Occasionally swirl the mixture in the pan. Cook for 2-3 minutes. Serve alongside the french toast.

Recipe Notes

For this recipe, I used Little Northern Bakehouse bread.

If you do not need gluten-free, any cinnamon raisin bread will work.
