Cheesy Bacon Potato Bites

Crispy on the outside, soft on the inside, these little bites are an explosion of flavour. A great party appetizer for those big and small.

  • 2 cups shredded white potatoes **see note
  • 2 cups old cheddar cheese shredded
  • 2 green onions sliced thin
  • 1 egg
  • 3 slices cooked bacon crumbled
  • 1 tsp garlic powder


  1. Preheat the oven to 400 degrees.

  2. Shred the potatoes and place them in a tea towel or cheesecloth. Wring out the excess water (it doesn’t have to be extremely dry).

  3. In a large mixing bowl, add the shredded potatoes, cheese, green onions, egg and garlic powder. Mix until everything is well combined, then add the bacon and mix one last time.

  4. Grease a mini-muffin tin, and fill each cup right to the top with the potato mixture. You can press it down a little bit.

  5. Bake in the oven for 20-25 minutes until the edges are a golden brown and the tops are very lightly browned.

  6. Remove and let them rest for 5 minutes. Remove the muffins and serve with a side of sour cream.

Recipe Notes

**If you have a food processor, shredding the potatoes will be much quicker.
