Caprese Spinach Salad with Baked Salmon

This is one of my go-to salads on a busy weeknight. I always have all the ingredients on hand, and it’s quick to prepare. If you are vegetarian, you can omit the salmon and add more cheese and avocado for extra protein.

  • 1 6 oz piece of salmon
  • 2-3 cups spinach
  • 1/2 avocado sliced
  • 1 small tomato sliced
  • thinly sliced red onion optional
  • 6 balls Boccacini cheese (or feta cheese)
  • 3 tbsp garlic balsamic dressing


  1. Preheat oven to 400 degrees. Place the salmon on a lined baking sheet. Sprinkle with salt and pepper. Bake 10-12 minutes.

  2. Place the spinach on a large plate, and add sliced tomatoes, avocado, and cheese.

  3. Once the salmon is done baking, pull out of the oven and place on top of the salad. Drizzle 3 tbsp. of garlic balsamic dressing

Garlic Balsamic Dressing

This quick dressing is a staple in my fridge. I eat it every week and have yet to get sick of it! It is so versatile, especially in the summer.

  • 4 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • 1 clove garlic minced
  • salt and pepper


  1. Add all the ingredients into an air tight container and give it a good shake until well combined. 

    Keeps in the fridge for a week.
