Buffalo Chicken Meatballs (Gluten Free)

These meatballs are tender, juicy, and have a great kick of heat. Serve with some ranch dressing, and it's a perfect delicious and healthy appetizer!

  • 1 lb ground chicken
  • 1-2 green onions chopped fine
  • 1 small carrot grated
  • 1/4 cup cornmeal or breadcrumbs
  • 1 small garlic clove minced
  • salt and pepper
  • 1 large egg
  • 1/4 cup Frank's Buffalo Wing Sauce
  • 1/4 cup ranch dressing for dipping


  1. In a large mixing bowl, add all the ingredients and mix well until everything is combined. Place the meat mixture in the fridge, and let it sit for 1-3 hours.

  2. Preheat oven to 400 degrees.

  3. Roll the mixture into golf-ball sized meatballs, and place on a greased baking sheet. Bake the meatballs for 15 minutes. Remove the meatballs from the oven and place them in a bowl. Pour the Frank's Buffalo wing sauce over the meatballs and toss until they are all evenly coated.

  4. Pop back in the oven for 2-3 minutes. Remove from the oven. Serve with ranch dipping sauce.
