

Buffalo Chicken Meatballs (Gluten Free)
These meatballs are tender, juicy, and have a great kick of heat. Serve with some ranch dressing, and it's a perfect delicious and healthy appetizer!
Ingredients
- 1 lb ground chicken
- 1-2 green onions chopped fine
- 1 small carrot grated
- 1/4 cup cornmeal or breadcrumbs
- 1 small garlic clove minced
- salt and pepper
- 1 large egg
- 1/4 cup Frank's Buffalo Wing Sauce
- 1/4 cup ranch dressing for dipping
Instructions

In a large mixing bowl, add all the ingredients and mix well until everything is combined. Place the meat mixture in the fridge, and let it sit for 1-3 hours.

Preheat oven to 400 degrees.

Roll the mixture into golf-ball sized meatballs, and place on a greased baking sheet. Bake the meatballs for 15 minutes. Remove the meatballs from the oven and place them in a bowl. Pour the Frank's Buffalo wing sauce over the meatballs and toss until they are all evenly coated.

Pop back in the oven for 2-3 minutes. Remove from the oven. Serve with ranch dipping sauce.
