Buffalo Cauliflower Bites

If you are a Pinterest food addict like myself, you’ll see that this recipe pops up regularly. People have gone crazy over cauliflower and its versatility. These buffalo bites are no exception. They are usually in the regular rotation on appetizer night in my house. These buffalo cauliflower bites also make a super delicious lunch as well. Sometimes lunch gets boring, and I love making buffalo cauliflower quinoa bowls for Jordan and I for lunch. You can find that recipe filed under “Mains.”

Ingredients

  • 1 head cauliflower cut into florets
  • 4 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp pepper
  • 1/4-1/2 cup buffalo wing sauce (adjust to personal preference)

Instructions

  1. Preheat oven to 400 degrees

  2. Place cauliflower florets on a baking sheet and toss with olive oil, pepper and garlic powder. Bake for 15-20 minutes, tossing around the 10-minute mark

  3. When the cauliflower is nice and crispy and golden brown, pull from the oven, place in a bowl and toss with the buffalo wing sauce. Place back on the baking sheet and put back in the oven for an additional 5 minutes.

These are great on their own, or serve with a ranch or blue cheese dipping sauce.
